Hi there!

I’m Leslie Lorraine, the hands and heart behind The Iron Rail Bakery, a cozy cottage micro bakery tucked beside the tracks in the charming town of Carlton, Georgia. Even though I am legally blind due to a congenital visual condition, I pour all my care and attention into creating confections that are as visually captivating as they are delicious.

I have a deep passion for patisserie and refined desserts, particularly French and European-inspired confections. I love exploring intricate techniques, balancing flavors, and crafting delicate sweets that are both elegant and playful. Every macaron, ganache, and cake-filled creation is an expression of that passion and attention to detail.

Long before I worked with sugar and chocolate, I explored the art of miniature ceramic pastries, sculpting tiny, realistic desserts in porcelain clay and turning them into scented jewelry. Each piece was playful, refined, and utterly delightful—a way to carry the joy of dessert with you. My creations were featured in magazines around the world, reflecting my lifelong fascination with beauty, craft, and precision.

The Iron Rail Bakery is a licensed cottage food kitchen in Carlton, Georgia, and all treats are made by a certified food handler.

Where/when do I pick up my order?

When you place your order, we will typically have your order ready within 24/48 hours. We will contact you to schedule a date and time for you to come pick up your order.

Menu

Expect a mix of seasonal confections with European and American inspiration, as well as whimsical macaron flavors like Strawberry Cereal Milk, and cake-filled flavors like Happy Birthday.

Do you offer gluten-free, dairy-free, or vegan options?

Our confections are not vegan, dairy-free, nut-free, or gluten-free. They are made in a small cottage kitchen with common allergens, so please be aware if you have dietary restrictions.

What kind of ingredients do you use?

We use fresh ingredients and source local whenever possible.
We use real vanilla beans and vanilla bean paste, and our chocolate is a variety of Guittard: either 62% cacao, Coucher du Soleil 72% Dark Couverture Chocolate, or Cocoa Rouge 22/24% Dutched Cocoa Powder. We also LOVE Callebaut Velvet white chocolate and Valrhona 33% White Couverture Chocolate.
